Katie and I are starting a new adventure

Due to Katie's stomach problems and some of my dietary issues, we have decided that we are going on a dairy-free vegetarian diet program. We want to see if it helps us. Katie was back in the hospital last week with blood in her vomit again. The doctors think it was a Mallory Weiss tear, which is a small tear in her esophagus that heals very quickly. We have to eat foods that are easy on our stomachs. Maybe this will fix my cholesterol as well. I will be posting recipes and photos of foods we try. This is what we had for breakfast today:

Slow Cooker Oatmeal
Makes 3-4 servings
  • 1 C steel-cut oatmeal
  • 4 C water
  • 1/2 t kosher salt
  • 1 t ground cinnamon
  • Optional additions: chopped nuts, fresh/frozen/dried fruit, honey, milk
Lightly coat the interior of your slow cooker with non-stick spray. Combine all ingredients inside, stirring to combine. Cook on low for at least 3 hours and up to 8 hours overnight.

I added dried apple slices and pecans to it. When we got up this morning, our house smelled like Christmas!

Sheldon and I were sorry to hear that Katie is still having health problems. Tell her we love her!
